Frozen Chocolate Banana Bites

Chocolate Banana Bites

One spotting banana sat there, staring at me, awaiting its fate.  Rarely does this happen, usually, strategically, there are 2-3 that are left to, much like caterpillars becoming butterflies, turn into something significantly better whether it be; a chocolate chip loaf, healthy bran muffins, or cake with vanilla icing (which according to my mom as long as it has vanilla icing counts as a breakfast food). Today I was stumped. I know I have a recipe somewhere for a one-banana bread – but I couldn’t seem to find it. I wanted/needed a treat. I googled around to get some ideas and here is my interpretation of the quickest, easiest one-banana treat I could find – they were good – I’d give them a  6, Mike gave them a 7.5.

  • One banana cut into bite size pieces – I got about 10 out of a medium-large sized banana.
  • Handful of chocolate chips melted in the microwave for about 20 seconds then stirred till smooth
  • Small handful of peanuts crushed

Dip the bananas in the melted chocolate – this gets messy. I tried to cover it but by the end I was just dipping the tops and then dredging them in the peanuts. Put in the freezer for as long as you can bear. Enjoy!
