M&M Cookies


So, I am nine months pregnant… I needed these cookies yesterday. Needed. So good, quick and easy. You can do a variation of M&M/Chocolate chip ratio.

1/2 cup butter (room temperature)
1/2 cup brown sugar
1/2 cup sugar
1 egg
1/2 teaspoon vanilla
1 1/2 cup flour
2 tablespoons instant vanilla pudding mix
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup M&M’s
1/2 cup chocolate chip

Cream together butter, pudding mix and sugars. Add in egg and vanilla. In a separate bowl mix dry ingredients, then add into butter mix. Fold in chocolate chip and M&M’s.

Drop by the tablespoonful onto prepared cookie sheets. Bake 10-12 minutes at 350 degrees. Makes 24-30 cookies, depending on the size you like. Enjoy!


White Chocolate Icing

White chocolate icing

I’m not a big white chocolate fan. But this icing was delicious! And the reviews from the wedding-shower goers was even better. I started with my vanilla icing recipe – so the ingredients are a bit of an estimate. Like most icing recipes you want to do it to taste, if you need to add more butter or icing to taste, and milk to consistency.


3/4 cup butter softened
3 1/2 cups icing sugar
2-3 tablespoons milk
1 tsp vanilla
1 bag of white chocolate chips (about 2 cups) melted


Mix together butter, vanilla, milk and icing sugar until lump free. Add in melted white chocolate. I mixed it with a hand beater and got a great fluffy consistency and it piped out wonderfully! Add more sugar if its not sweet enough, more butter if its too sweet, and more milk if its too thick.

Bakers White Chocolate Cheesecake

White Chocolate CheesecakeI just made this heavenly white chocolate cheesecake topped with strawberries and blackberries for dinner with a few friends. Super easy to make – the only thing complicated is the three part baking – but unlike some cheesecakes that bake for hours its still less than an hour to do. Mine always takes a little longer to bake as I use a smaller deeper cheesecake pan to cook it in. Make sure you factor in fridge time – you want several hours if not overnight.


2 packages cream cheese
1/3 cup sugar
1 tsp lemon juice
6 oz bakers white chocolate – melted
¾ cup sour cream
1 tsp vanilla
2 eggs


1 cup sour cream
2 tbsps sugar

Beat together cream cheese and sugar until well blended. Add in ¾ cup sour cream, lemon juice, vanilla and mix while white chocolate is melting in the microwave (careful not to burn it! Took me 2-3 minutes on medium, stirring ever 45 seconds). Mix well. Add in eggs just until well blended. Bake at 450 degrees for 10 minutes, and then reduce down to 250 degrees for 30-35 minutes. While that is baking, mix together 1 cup sour cream and 2tbsp sugar in a separate bowl. Top cheesecake after the 35 minutes at 250 degrees and bake an additional 5 minutes. Remove from oven, let cool, then refrigerate for 2-24 hours before serving. Top with berries and enjoy!

Chocolate Guinness Cupcakes with Bailey’s Icing


What is more festive for St Patrick’s day then these? Chocolate cupcakes made with Guinness and topped with mint icing with Bailey’s? And they were delicious.

I followed the recipe on ( for Chocolate Stout Cake, but just made cupcakes – since – well – I love cupcakes! So follow this recipe for them. Or I have heard you could use a Betty Crocker cake mix and just add a can of Guinness instead of the oil and water? I am going to try that next year and will report back!

Icing Ingredients:

4 Cups Icing Sugar
3/4 Cup Butter, softened
1/4 Cup Bailey’s Original Liquor
2-3 Tablespoons Milk
1 Teaspoon Mint Extract
Green food colouring

Icing Directions:

Mix all the ingredients in a bowl with a hand mixer. Add food colouring until you get the colour you were looking for! Pipe onto your cooled cupcakes and lick the bowl clean – watching out you don’t catch a little buzz! Enjoy!

Black Bean Brownies (gluten free)

I have made black bean brownies before, the last time I followed a recipe that was using a box mix for brownies and substituting the oil and water with black beans, which turned out ok. I wanted to try some from scratch that were also gluten free for my friend Jenn that its gluten intolerant. I merged a few together to create this recipe, which is good for a small serving – it made one loaf pan instead of a full square, but it would be really easy to double. It was pretty good – especially when you factor in the fiber and protein, we ate it last night warm with a side of frozen yogurt!


1 cup Rinsed and drained canned black beans
1 Egg
1tbsp Oil
¼ cup Sugar
1 tsp Vanilla
¼ Chocolate chips
¼ Walnuts


Preheat oven at 350 degrees. Puree the black beans. Add in eggs, oil, sugar, vanilla and cocoa and blend. Once well mixed, fold in chocolate chips and nuts. Spread into a prepared pan. Bake for 20-25 minutes. Dust with icing sugar. Enjoy!

Lemon Blackberry Cheesecake

Lemon Blackberry Cheesecake

I made this dessert for the 2012 Carroll Easter. I found this recipe on Pinterest. It was posted on iVillage( I made a couple healthy changes; greek yogurt instead of sour cream and light cream cheese instead of regular and then I mixed some yogurt, sugar and a squeeze of lemon and poured a few tablespoons on top with blackerries and a dusting of icing sugar – purely esthetic. When I make this again (can’t wait for the next time – it was delicious) I would make two small changes: I would divide the batter in 1/3 and 2/3 and add the blackberries to the 1/3 instead of 1/2, this way you could get a much deeper colour in the bottom; andI would add some more lemon to it for a stronger lemon flavour.
